Hotel Information: Established by Laurence Rockefeller in 1986, this St. Croix Resort reflects the environmentalist/philanthropist’s vision: relaxation and fresh air in a secluded, natural setting. Buildings with pitched corrugated red-steel roofs, inspired by West Indies fishing villages, are nearly concealed by trees and profusely flowering gardens. The Carambola Beach Resort has had a series of owners over the years, but remains a tranquil destination primarily for adults—although children are welcome.

Amenity highlights: Hammocks are suspended from palm trees, and lounge chairs dot the sands of the 450-yard beach. Snorkeling sites are close to shore. Two prime wall-dive sites are within 200 yards of the beach. A dive shop snorkeling gear, boogie boards, and scuba gear and offers scuba instruction and certification. The 105-foot outdoor pool and four-person spa tub are open around the clock.

Insider tip: The only site within the U.S. and its territories that has been documented as a landing place for Christopher Columbus and his fleets is six miles away in Salt River Bay National Park & Ecological Preserve on St. Croix. Columbus himself is not thought to have come ashore, but some of his sailors did during his second voyage in 1493.

Carambola Beach Resort offers 151 guestrooms in 25 two-story cottage-like buildings surrounded by trees and dense flowering gardens.

Luxury category guestrooms feature granite and marble throughout, dark-wood furniture, and king beds. Amenities include fully equipped kitchens, screened-in patios, flat-screen plasma TVs, sofa beds, ceiling fans, and oversized walk-in marble showers.
